What to Order at a Teppanyaki – A good teppanyaki order starts with one dish from the teppan, usually a steak or grilled fish, plus garlic rice and a couple of small plates to share. At Rayjin in Bali, most first-time guests build the meal around the Meltique Steak (Rp 398,000), 200 g of diced beef seared on the iron plate and served with three sauces. A shared meal with a steak works out to around Rp 290,000 to Rp 350,000 per person, including service and tax, before drinks.

How a teppanyaki menu works

Teppanyaki menus mix two kinds of dishes. Some are cooked on the teppan, the iron plate, usually in full view of the guests. Others come from the kitchen: fried starters, dumplings, sushi, ramen and desserts. Rayjin’s menu makes this easy to spot, because every plate cooked on the iron grill is described as “teppan grilled.”

The difference matters for the show. The flame comes with teppan dishes, and the diced steaks are the ones guests film most. A table that orders only gyoza, ramen and sushi will eat well, but it won’t see much of the grill.

Beef

Beef is the classic teppanyaki order, and Rayjin’s beef section runs from sliced beef on a sizzling hot plate to premium wagyu.

Tell the chef how you like your steak before the cooking starts. Marbled beef is at its best medium-rare to medium, because the fat needs heat to melt, while longer cooking dries the meat out.

Seafood

The Gindara Misozuke (Rp 125,000) is the best non-beef main on the menu: black cod marinated in miso, then grilled on the teppan until the surface caramelises. The Salmon Teriyaki (Rp 178,000) comes with mixed mushrooms. Seminyak has a Scallop Broccoli Motoyaki (Rp 195,000) with miso garlic cream, and Ubud has a Seafood Brocoli Mayo (Rp 178,000) with scallops and prawn. The Teppan Prawn Ebichiri (Rp 168,000), prawns in a spicy chili tomato sauce, is on the menu in Seminyak and Ubud.

Chicken and pork

Chicken is the most affordable way into teppanyaki at Rayjin, with every chicken dish between Rp 78,000 and Rp 80,000. The Chicken Nanban, a best seller, is teppan-grilled chicken in a sweet and sour marinade with Japanese tartar sauce and basil pesto. Chicken Teriyaki, Creamy Garlic Chicken, Chicken Yuzu Kosho and a Korean Chili Cheese Chicken finished with melted mozzarella make up the rest.

For pork, the Truffle Mushroom Pork Chop (Rp 178,000) is the standout: a teppan-grilled pork loin with creamy truffle mushrooms, chili oil and balsamic. The Pork Shogayaki (Rp 98,000, Seminyak and Ubud) is pork loin in ginger sauce on a hot plate. The Pork Karaage Nanban (Rp 98,000) is deep-fried pork belly, so it comes from the kitchen, not the teppan.

Rice

Garlic Rice is the traditional teppanyaki side. Rayjin fries it on the teppan with butter shoyu and garlic chips, in a 100 g portion (Rp 30,000) or 200 g (Rp 48,000). The Salmon Fried Rice and Gyutan (beef tongue) Fried Rice are Rp 58,000 each. For something bigger, the hot stone bowls are a meal in themselves: the Beef Truffle Don (Rp 238,000) with Meltique beef slices, black truffle oil and a 63°C egg, and the Salmon Mentai Don (Rp 178,000) with flame-seared salmon roe.

Small plates

Nori tacos are Rayjin’s best-known small plate: crisp seaweed shells filled with rice, onion jam and a topping, from Rp 42,000 to Rp 55,000. The salmon version is a best seller in Seminyak. Pork Gyoza (Rp 68,000 for six) and Edamame (Rp 25,000) are easy openers, and the Mushroom Butter Shoyu (Rp 50,000) is a good vegetarian choice. Ubud also serves a Prawn Tempura Mayo Popcorn (Rp 150,000).

Sushi, sashimi and ramen

Every Rayjin serves sushi rolls, and they make a cool contrast to the grilled dishes. Ubud has the biggest sushi menu, with the flame-seared Sushi Aburicious (Rp 128,000) and sashimi sets from Rp 198,000. In Seminyak, the sushi section comes from sister restaurant Kajin Contemporary Sushi. Ramen runs from Rp 100,000 to Rp 120,000 at all three restaurants.

Dessert

The Chocolate Caramel Lava Cake (Rp 70,000) is the best-selling dessert. The Apple Pie Gyoza (Rp 55,000) is a playful take on the dumpling, served with vanilla ice cream. Basque Cheesecake and Matcha Tiramisu are Rp 68,000 each.
