The room and the counter

Live Teppanyaki Seminyak: What to Expect at Rayjin Petitenget

Rayjin Seminyak is a busy, loud room, and that is the point. The team greets guests in Japanese as they walk in, orders are called across the kitchen, and every few minutes a flame jumps off the teppan. Most guests come for exactly that energy.

The teppan counter is where most people want to sit. Seats run side by side facing the grill, so you watch your food go from raw ingredients to plate, and the chef is close enough to talk to. Couples, solo diners and first-time teppanyaki guests tend to enjoy the counter most. Tables work better for groups of five or more. Counter seats fill first at dinner, so ask for one when you book.

“We dice the Meltique Steak before it goes on the teppan, so every piece gets a crust on all sides and stays juicy in the middle. The flame at the end is part of the show, and it also caramelises the surface in a few seconds. For a first visit, I always give the same advice: sit at the counter, order the steak medium-rare, and ask us anything while we cook.” Head Chef, Rayjin Seminyak

The birthday guests who reserve have described finding a welcome card at their seat with their name brushed in Japanese calligraphy.

The Seminyak menu also includes dishes from two Kaminari Group sister restaurants: a sushi and sashimi section by Kajin Contemporary Sushi, and ramen, agedashi tofu and chicken karaage from Dahana Restaurant. The menu marks these dishes as vegetarian options: Edamame, Kimchi, Mushroom Butter Shoyu, Seaweed Salad, Japanese Mushroom Salad, steamed rice (Gohan) and Garlic Rice. The Garlic Rice is cooked with butter, and the Miso Soup and Agedashi Tofu are made with seafood broth, which matters for vegans and pescatarians. The menu also includes pork, beef and raw fish.

Teppanyaki is cooked on a shared iron plate, and many dishes use soy-based sauces. Mention allergies when you book, so the chef can plan before service. Rayjin has told guests it cannot guarantee gluten-free meals because of the risk of gluten traces
